It's officially my favourite time of year! The leaves turn beautiful shades of red, the brisk wind sets and scarves and toques are becoming a common sight. And there's pumpkin flavour everything! From lattes and pies to marshmallows! There's no shortage of pumpkin anywhere and that is completely 100% fine by me.
Starting this month I want to do something different and will help add some consistency to my posts; a marshmallow of month flavor! I recently discovered how to make them and I can't seriously stop. There's so many different flavour combinations you could do and you can have them alone as a dessert or a perfect topping to hot chocolate!
The ingredients you will be needing to make marshmallows are: 2 packets of gelatin, water, corn syrup, icing/confectionery sugar, granulated sugar, vanilla extract, food coloring and some pumpkin spice.
First you want to put the packets of gelatin into a bowl of water and let sit for about 10 minutes until it slightly sets
In a medium sauce pan, bring to a boil your corn syrup, granulated sugar and water.
Add the set gelatin mix to the boiling sugars and watch it expand into a frothy hot concoction of sugar. (Warning: at this point it might slightly over flow which is okay, just set the heat down a little)
Then pour concoction into a large size bowl and using an electric mixer start mixing on a low speed for about 2-5 minutes or until the liquid has cooled down enough. Add vanilla extract and a little salt to the mixture at this point. Then turning your mixer to high, mix the marshmallow for up to 15-20 minutes or until it has doubled in size and has turned light and fluffy. At some point feel free to add food coloring and flavourings to your marshmallows.
Quickly pour your mixture into a preset baking pan lined with foil and baking spray. Once you pour the mixture it will start to stiffen right away making it hard to work with, so you want to try to do this part as swiftly as possible.
Try to smooth out the pass as much as you can, and let chill in the fridge anywhere from 3-6 hours. (I left mine overnight) Once settled and stiff, flip onto a cutting board that has been dusted with confectionery sugar. Cut into squares or if you have fun cookie cutters, you can use them too!
And voila you have your very own marshmallows! Enjoy them on your own or share them with your friends but either way this makes a great dessert and a special treat for whenever you want them. (Don't forget that if you want to make them ahead of time, to keep them in an airtight sealed container to maintain freshness!)
